Saag Aloo is a perfectly spiced spinach and potato dish. It can be served as a curry by itself, or more often, served as an accompaniment to meat or chicken dishes or side dish to a meat, chicken or fish curry.
Feel free to experiment by adding cauliflower, capsicum, extra tomato or any other vegetables.
- Par boil five medium size potatoes.
- In a separate pan, lightly fry the contents of the spice kit in one tablespoon of ghee (or oil) for one minute.
- Chop three tomatoes and add to the spices.
- Add approx. 400g spinach and the parboiled potatoes.
- Add 250ml hot water.
