Wholesome Spiced Lentil and Vegetable Soup

When the weather turns chilly and you crave something warm and nourishing, a bowl of spiced lentil and tomato soup hits the spot perfectly. This recipe combines hearty lentils with the rich tang of tomatoes and a blend of warming spices. It’s a simple dish that fills your kitchen with inviting aromas and your body with comforting energy. Whether you want a quick lunch or a satisfying dinner, this soup delivers on flavour and nutrition.

Searing the Beef

Sear beef fillets on high heat for 2 minutes per side to form a golden crust. Let it cool before proceeding to keep the beef tender.

Mushroom Duxelles

Cook the mushrooms until all moisture evaporates to prevent soggy pastry. Aim for a thick, paste-like consistency.

Puff Pastry Handling

Keep the puff pastry cold to avoid softness. Chill if it becomes too soft, and score the top lightly without cutting through.

Heat some cooking oil in a large pan. Add the chopped onion and fry until golden.
Then add the garlic and spices (cumin, turmeric, ginger, cinnamon, cardamom, chilli and salt )and let them cook very gently for 60 seconds, taking care not to burn the spices.

Rinse the lentils in cold water until the water runs clear.
Then add the lentils to the spices and three chopped tomatoes, or approx 150g of tinned tomatoes.
Cover with approximately 600ml of cold water.
Turn up the heat, cover and bring the water to the boil.

Once the water is simmering add your choice of vegetables. We have used butternut squash, courgettes, sweetcorn,
turn down the heat to allow the water to simmer gently with lid in place so that the water doesn't evaporate too quickly.

Stir occasionally to ensure the soup is not sticking to the bottom of the pan. Add more water if needed.
Once lentils are soft, uncover and blend the soup.
Serve with crusty bread, flatbreads or on its own.

Instructions

200g lentils

One large onion sliced

4 cloves of garlic

1 tsp turmeric

1 tsp ground ginger

1/4tsp ground cinnamon or 1 piece cinnamon stick

4 cardamom seeds

Chilli to taste

Salt to taste

Vegetables of your choice

150g chopped tomatoes

1 tsp cumin seeds

Our spiced lentil and vegetable soup is a hearty, warming, gently spiced soup that's very easy to make.
Perfect for winter nights. Lovely by itself, or with crusty bread, or our own flatbreads.
This recipe will make a good pan-full to serve four, or you can freeze any leftovers for another day.
